From the local kitchen at Chez Panisse to his restaurants Jam and Washington Park in New York City, Jonathan Waxman has earned the title of one of the most influential Americans by Esquire magazine for redefining the way our country eats. In Italian, My Way, he offers 150 recipes that are delicious, accessible and seasonally spontaneous. The chapters cover the basics of Italian cooking with some inventive riffs on classics such as how to make aioli, gremolata, winter pesto, Bolognese sauce, and mascarpone cheese. Maricel Presilla is a culinary historian who specializes in the foods of Latin America and Spain. "People go to the gym, I go to the kitchen," says Presilla, a scholar turned chef.  In the voluminous and gorgeous Gran Cocina Latina: The Food of Latin America, home chefs will find over 500 recipes ranging from sofritos to empanadas, from ceviches to moles and from flan to tres leches cake. Presilla is a cookbook author, owner of Zafra and Cucharamama restaurants in Hoboken, NJ and just named the James Beard award Best Chef Mid Atlantic, She is also the President of Gran Cacao Co., a Latin American food and research company that specializes in the sale of premium cacao beans.
