Allen Salkin - From Scratch

Saturday, November 15, 2014 - 4:00pm

America has come a long way from the handful of “dump and stir” cooking shows of the 1970s and 80s to the vast and vibrant television food scene of today, when most of the population seems to be on a first-name basis with the likes of Bobby Flay, Ina Garten, and Mario Batali. Now out in paperback, From Scratch: The Uncensored History Of The Food Network is the first book about the network that covers the whole story from the beginning. It includes a brand new afterword with behind-the-scenes revelations about a bullying Robert Irvine as he confronts a rising rival, a never-say-die Paula Deen trying to rebuild her brand against all odds, and a not-ready-for-her-close-up Ree Drummond, the Pioneer Woman, as she struggles to adapt to being a TV star. Illuminating one of the most notable cultural and media trends of recent decades, the rise of a food-obsessed culture, the book also tells a powerful business story, revealing how creativity, chance, technology, and money sometimes work together and sometimes at cross purposes when building a brand. In its paperback form, it will continue to be devoured by devoted fans of food shows, by media business junkies who want to know how an empire was created, and by everyone curious about what some of today’s best known pop culture personalities are really like behind the scenes.

Allen Salkin's journalism has appeared in The New York Times, New York Magazine, The Village Voice, and Details. He produces and stars in video interviews of food celebrities for a variety of websites. A well-known trend spotter, his article on the renewed popularity of monocles attracted worldwide attention in spring 2014. Allen was a featured player on the E! reality show #1 Single, has appeared in documentaries including True Hollywood Story: Chris Farley, and on numerous outlets to discuss his first book Festivus: The Holiday for the Rest of Us, about the Seinfeld-inspired celebration.

A narratively rich cookbook of French and Californian recipes from longtime Chez Panisse executive chef Jean-Pierre Moullé and his wife, Denise Moullé. French Roots spans 60 years and two continents, following the lives of its authors through food. Beginning with the dishes of old-world France, the couple’s birthplace, the book focuses on the simple, pared-down preparations of French food common in the postwar period. Their story then travels to the San Francisco Bay Area in the 1970s, where Jean-Pierre was appointed executive chef at Chez Panisse when California cuisine was just emerging as a distinctive and important style, and where Denise began importing French wine. Finally, the journey returns to France, where the couple revisit the classic dishes of their native country and forgotten skills of foraging, hunting, and preserving at their home in Bordeaux. So much more than a collection of 100 elegant recipes, French Roots is the story of an adventure of two people and two cuisines.

Until his retirement in April 2012, Jean-Pierre Moullé was the executive chef at Chez Panisse, where he began working in 1975. Denise Moullé comes from the Bordeaux wine-making empire of the Lurton family. She worked as a wine distributor in California for many years before starting Two Bordelais in 1987, which offers guided tours through France.

Heather Greene - Whisk(e)y Distilled

Thursday, November 6, 2014 - 7:00pm

Whiskey is in the midst of a huge renaissance. Ten years ago, the United States housed sixty-nine craft distillers; today, there are more than four hundred. Exports of Scotch whisky grew 12 percent just last year. Sales are skyrocketing, and specialty bars are popping up around the country, from New York City to Chicago to Houston. Yet whiskey drinkers—especially novices—are more confused than ever. Over the past decade, whiskey expert Heather Greene has been bombarded with thousands of questions, including: Can I have ice in my whiskey? Why is it sometimes spelled "whisky"? What makes bourbon different? In the lively and authoritative guide, Whisk(e)y Distilled: A Populist Guide to the Water of Life, Greene introduces audiences to the spirit’s charms and challenges the boys' club sensibilities that have made whiskey seem inaccessible.

Heather Greene is the director of the Whiskey School at the Flatiron Room in Manhattan, which offers courses on tasting and history that sell out every time. She is New York City's first female whiskey sommelier.
